I ordered my crepes stuffed with a generous mix of pork and bean sprouts, leaving out the shrimp. The real magic happens when you wrap a piece of the banh xeo in fresh lettuce or rice paper, add herbs like mint and cilantro, and dip it into the tangy nuoc cham (dipping sauce). The combination of textures and flavors—crunchy, savory, fresh, and slightly tangy—creates a culinary experience that’s quintessentially Vietnamese.
